Omelette Wrap with Asparagus, Babybel & Rosemary

Ingredients

  • 2 eggs

  • 7 green asparagus tips

  • 1 Mini Babybel cheese

  • 1 whole wheat tortilla or wrap

  • Fresh rosemary flowers (optional, rosemary leaves is more than fine)

  • Olive oil, salt, pepper


Instructions

  1. Steam or sauté the asparagus until tender.

  2. Beat the eggs with salt and pepper, and start cooking a thin omelette in olive oil.

  3. Add asparagus and a sliced Mini Babybel, cover the pan and keep cooking it at low temperature (so the cheese will melt).

  4. Place the omelette on a warmed tortilla.

  5. Add rosemary flowers or leaves.

  6. Roll or fold, and serve warm.
