Cod with Cherry Tomatoes and White Onion

Cook time: 25 min covered + 7–10 min uncovered
Ingredients
1 cod fillet (approx. 200 g)
2 ripe tomatoes
1 white onion
Extra virgin olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 180°C (350°F).
Cut the tomatoes in half and thinly slice the onion.
Line a baking tray with parchment paper or use an ovenproof dish. Arrange the cod fillet, onion slices, and tomato halves.
Drizzle with olive oil, season with salt and pepper.
Cover and bake for 25 minutes. Then uncover and bake for another 7–10 minutes until the cod is tender and the vegetables are roasted.
